Today, we’re making a Turkish classic, Çilbir, with a little twist.

Ingredients:

500 gr fresh spinach leaves, washed and roughly chopped
1 onion
1 clove garlic, minced
plain yogurt
1 egg
olive oil
pepper paste
paprika
salt
vinegar (for poaching eggs)

Instructions:

Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until fragrant. Stir in the pepper paste and chopped spinach and cook until wilted. Add a pinch of salt for flavor.

Mix the plain yogurt with a small pinch of salt and minced garlic. Set aside.

Fill a pan with water and boil it. Add a splash of vinegar and salt. Crack the egg into a small bowl, then carefully slide it into the simmering water. Cook 1 minute.

In a small pan, warm up the olive oil. Stir in paprika or chili flakes and remove from heat immediately to avoid burning.

Spread the cooked spinach onto a plate. Drizzle the yogurt sauce over the spinach. Place the poached eggs on top. Finish with the spiced olive oil sauce drizzled over the eggs.
