I have used Red lentils or masoor daal, but you can also make them with other moong daal or yellow lentil. These savoury red lentil pancake recipe is super easy to make and perfect to serve with your favourite pickle, chutney or curry. Give it a try and you will love it. INGREDIENTS AND METHOD
Red Lentils (2 cups or 400 g)
Rinsed, Soaked and drained
(Soak in water overnight or at least 4 hours)
Salt (1 tsp or to taste)
Red Chilli flakes (1/2 tsp)
Roughly chopped Ginger (2 inch piece)
Green Chillies (2-3 or to taste)
Water (1 cup or as required)
Grind/blend into a fine batter with a pourable consistency
Chopped green Coriander (1/4 cup)
Chopped Spinach (1/2 cup)
Combine well
Cover
Rest the batter for 4-5 minutes
Put a pan over a medium-high heat
Add few drops of oil (spread with brush)
Pour around 2/3 cup of batter
Spread into 6-7 inch pancake
Cook for 2-3 minutes
Carefully flip the pancake
Add few more drops of oil on top
Cook for 2-3 minutes or until light brown marks appeared
Makes 8-10
Soft & fluffy red lentil pancakes are ready to serve!

*These Protein-rich, gluten-free and vegan savoury pancakes can be stored in refrigerator in an airtight container for 3-5 days (reheat on a hot pan for 1-2 minutes on both sides)
