Join me as I attempt to make this fabulous eggplant casserole from Ruperto de Nola's book "Llibre del Coch".

If you'd like to try this recipe yourself, you will need:
3 large eggplants
5 eggs
1 cup fresh breadcrumbs or panko
1 cup manchego or other hard cheese
½ teaspoon each of coriander, caraway, and pepper
¼ teaspoon each of ginger and cloves
¼ cup of oil
3 threads of saffron
Honey and powder douce to serve (optional)
