Chinese Potato Lollipops
Ingredients
For Potato Lollipops
Boiled Potatoes 700 grams
Salt to taste
Red chili flakes 1/2 tsp or more
Turmeric powder 1/2 tsp
Cumin powder 1.5 tsp heaped
Black pepper powder to taste
Chopped onion 2 tbsp
Chopped fresh coriander 2 tbsp
Breadcrumbs 3/4 cup
Extra Breadcrumbs for coating
For Sauce
Oil 2 tbsp
Ginger 1/2 tsp, finely chopped
Garlic 1/2 tsp, finely chopped
Onion 1 tbsp chopped
Red bell pepper 1 tbsp chopped
Green bell pepper 1 tbsp chopped
Water 4 tbsp
Chicken cubes 2
Soy sauce 3 tbsp
Chili sauce 4 tbsp
Ketchup 3-4 tbsp
Vinegar 1-2 tbsp
Corn flour slurry (3 tbsp corn flour mixed in 1/2 cup of water)
Preparation
Potato Lollipops: Peel and mash the potatoes and add all the ingredients. Mix well using hand and then shape into lollipops with sticks.
Coat the lollipops in breadcrumbs and cook on tawa/pan using only 2-3 tbsp oil.
Arrange the sticks in a serving dish.
Sauce: Heat oil in a saucepan and add ginger, garlic, onion and bell peppers.
Sauté for a few minutes and add water, chicken cubes and all the sauces (soy sauce, chili sauce, ketchup and vinegar).
Cook for a few minutes and add corn slurry. Stir constantly until the sauce is thick and shiny.
Pour the sauce over the lollipops and serve with egg fried rice. Enjoy!
