Tea Cake is a slightly sweetened treat that is made up of simple ingredients that most people have on hand. Some tea cakes are more cookie than cake while others are more cookie than cake.( depends on the ratio of the ingredients)

Ingredients :
All purpose flour- 1 cup
Corn flour- 4 tbsp
Baking powder - 1 tsp
Softened butter -100 gms
Powdered sugar- 3/4 cup
Eggs - 2
Vanilla essence - 1 tsp
Grated lemon peel - 1 tsp
Cashew nuts- 1/4 cup
Milk -1 tbsp
Dry fruits & nuts (optional)

Preparation:

Sift All purpose flour, baking powder & corn flour 2-3 times through a seive and keep aside. The corn flour here gives the cake a thick consistency.

In a large bowl, beat softened butter and powdered sugar with a wodden spatula or whisk or hand blender till fluffy.

Now add 2 eggs, one at a time and beat well till fluffy.

Add in the flour mix little by little and mix with spatula.

Add lemon zest and vanilla essence in to this.
Add cashews and chocolate chips or dry fruits ( optional)

Finally Add 1 -2 tbsp of milk to this batter and mix. Batter will be tight for tea cake than a regular cake batter.

Take this batter in a loaf pan or mini loaf pan.
Add chopped dry fruits and nuts on top (optional)

Bake in a preheated oven for 10-12 minutes in mini loaf pan or 20-30 minutes in a regular loaf pan at 350degrees F.

Let it cool, demold & enjoy!
