You will not believe how such a simple dish can taste sooooooo good. Wow your family and friends with the exquisite flavours of pasta with wild fennel. Wild fennel grows everywhere in Italy. If it is not available where you are then use the green fonds from the top of Florence fennel bulbs. Since Florence fennel has a milder flavour you will need to use more of it than the recipe suggests.

Ingredients (for 5 people)

50g fennel fronds
2 cloves garlic
3 tbsps extra virgin olive oil
dried red chilli to taste
10 anchovies
75g mezze maniche (or rigatoni, or penne) per person
10g per litre of pasta water (ideally use 1 litre of water for every 100g of pasta)
