Getting the last bit of highly condensed maple sap out of the evaporator pan to prevent over cooking/scorching the syrup and (or scorching the pan) is the first little challenge when its about time to start the finishing process. There could be better ways to do this, but this is currently my method with my divided pan. I like to boil the sap down in the pan as much as I can (or feel comfortable with) so that I do not have to boil as much on the stove in the house, which takes considerably longer. ** WARNING: Always take proper safety precautions, remember that boiling sap/syrup is extremely hot, and be very careful when moving a large pan with hot sap/syrup **
