Bihari Seekh Kabab Recipe

Ingredients:

- 500g mutton or beef, minced
- 2 onions, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 tablespoon raw papaya paste (acts as a tenderizer)
- 2 teaspoon chana powder
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon salt (adjust to taste)
- 1 tablespoon mustard oil
- Skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions:

1. Marinate the Meat:
- In a large bowl, mix the minced meat with ginger-garlic paste, red chili powder, garam masala, cumin powder, coriander powder, turmeric powder, black pepper, salt, raw papaya paste, kabab masala, and mustard oil.
- Add finely chopped. Fried onions and
- Mix all the ingredients thoroughly until well combined.
- Cover the bowl with cling film and marinate the meat for at least 2 hours,This allows the flavors to meld and the meat to tenderize.

2. Shape the Kababs:
- Take a handful of the marinated meat mixture and mold it onto skewers in the shape of a long, cylindrical kabab. Ensure that the mixture sticks well to the skewers.
- If the mixture is too sticky, you can wet your hands with water to help shape the kababs.

3. Cook the Kababs:
- Preheat your grill or tandoor to medium-high heat. You can also use a grill pan or an oven.
- Place the skewers on the grill and cook for about 8-10 minutes on each side or until the kababs are evenly browned and cooked through. If using an oven, preheat it to 180°C (350°F) and bake the kababs for 20-25 minutes, turning them halfway through.
- Baste the kababs with a little mustard oil or ghee during grilling for added flavor.

4. Serve:
- Once cooked, carefully remove the kababs from the skewers.
- Serve hot with sliced onions, lemon wedges, and mint chutney or your favorite dip.
