Honestly, when I made this recipe I was working on several desserts at the same time. So, I made this coconut ganache to decorate a Tart and then I forgot about it. But I thought about making a coconut craquelin and a brioche and then combining the three. It turned out to be a good idea! Enjoy!

● Coconut Ganache

50g heavy cream
1 gelatin sheet (2g)
40g white chocolate, melted
150g coconut purée
125g cold heavy cream

● Brioche

Dough:

13g milk
20g fresh yeast
375g bread flour
9g salt
35g icing sugar
3 medium eggs (150g)
4 egg yolks (75g)
175g softened butter
20g honey/glucose

75g butter
95g brown sugar
95g pastry flour
20g shredded coconut
