Servings: 4-5

Ingredients

Full-fat Milk - 1 Litre
Vermicelli - 1 Cup
Sugar - 1 Cup
Ghee
Cashew Nuts
Raisins
Water - 1 Cup
Cardamom Powder - 1 Tsp

Method:

1. Boil full fat milk. Keep a little boiled milk aside.
2. Take sugar in a pan and melt it down completely. Once it starts caramelizing, add in the boiled milk slowly and keep mixing it.
3. Let the milk boil along with caramel for a minute or so.
4. Take ghee in a pan and add cashewnuts to it. After a few seconds, add in the raisins and roast.
5. Take ghee and vermicelli. Roast it until it is golden brown in colour.
6. Add water, mix well and then add the milk that is kept aside.
7. Boil the milk and add caramel milk.
8. Mix it all well and add cardamom powder, roasted nuts and roasted raisins.
9. Cook the kheer on a medium flame for a minute or two and then turn off the stove.
10. Caramel Vermicelli Kheer is ready to be served hot and nice or you can refrigerate it and serve it cold.
