Beans are one my favorite things to eat at home, I grew up eating them all the time. Today am sharing this 3 beans stew recipe using pinto, kidney and cannellini beans. Using canned beans in this recipe quickens the process and you still up with a comforting and delicious dish that you and your family will enjoy. You can still opt to cook the beans from dry if you prefer this method.

INGREDIENTS
1 can Pinto Beans ( about 415g )
1 can Kidney Beans
1 can Cannellini / White beans
Drain the beans in a colander and briefly rinse ( optional )

1 Medium size Yellow onion, peeled and diced small
1 tbs Garlic, chopped
1 Green chili, chopped
1 tbs Coriander
1 tsp Cumin
1 tsp Paprika
1 tsp Oregano, dry
1 tsp Thyme, dry
1 tsp Tomato paste
2 cups water or as needed
1 cup Tomato puree / 3 small Roma tomatoes
2 cups Carrots, diced small
1 1/2 cups Bell peppers ( Yellow, Red and green ) diced bite size
1/2 Cilantro
Salt and pepper to taste

For the Basmati
2 cups Basmati rice, rinsed and soaked
1/2 cup Onions, diced
1 tsp Garlic, chopped
1 Bay leaf
1 3/4 cups water
Salt and pepper to taste
