Making black eyed peas is so easy and the result is a delicious dish that you and your family will definitely enjoy.
Black eyed peas or Baazi in Swahili, cooked in coconut milk is a staple in coastal Kenya, mostly for breakfast. Black eyed peas are a classic recipe in Southern cooking here in US, most made during the New Year season. Hope we are not too late here, but still lets give it a short. Who knows it might bring us luck too.
For my recipe am starting with a pound of dry black eyed peas, pick through them through them for any sand grains and the spoilt ones if any. Wash them thoroughly and then soak for an hour preferably overnight in fridge.

INGREDIENTS
16oz dry black eyed peas, picked, washed and soaked
2 bay leaves
4 cups water, or more as needed
Salt and pepper, after 45 minutes cooking
Lemon juice

For the vegetables
2 Tbs Vegetable oil
1 Tbs Garlic, chopped
1 Tbs Ginger, minced
1 Green chili, ( Jalapeno )chopped
1Tbs Coriander
1 Tsp Cumin
1/2 Tsp Paprika
1 Tsp Turmeric
1 Tbs Curry leaves
1 Tsp Tomato paste
2 Ripe tomatoes, diced small
Cilantro stem, optional
salt and pepper
2 Sweet potatoes. peeled and diced bite size
2 Medium carrots, peeled and diced bite size
1 Red bell pepper, deseeded and sliced medium
Lemon juice
Cilantro to finish and garnish
Salt and pepper to taste.
