One of the best meals I've ever had is this recipe for Hatch Chile Stew, the comfort food of all comfort foods!

Ingredients
6 Hatch Chiles
Grape seed, or other neutral oil
2 lbs (1 kg) Pork Shoulder, 1½” cubes
1 Tbs Unsalted Butter
1 Tbsp Flour
1 Large Onion, roughly chopped
2 Garlic Cloves, finely chopped
½ Bottle of Beer
2 Tomatoes, chopped 1” pieces (or 1 small can diced Tomatoes)
1 Large or 2 Small Potatoes, 1” dice
4-6 Cups Chicken Stock
1½ Cups Salsa Verde
1 Bay Leaf
1 tsp Oregano
1 tsp Cumin Powder
1 tsp Paprika
Salt, Black Pepper to taste

With a strong background in the creative and visual arts, Chef Walter’s style can best be described as “gastronomic bistro”. Having completed a “Diplome de Cuisine” at the famed Le Cordon Bleu Culinary Institute in Paris, as well as the highly rated Walnut Grove Cookery School in France’s Loire Valley, Walter relies on his French training and techniques to assure top quality, but remembers his Texas roots and always cooks from the heart!
