Tofu Fa or Douhua is a traditional Chinese dessert made from soybean. It's silky soft texture with sweet ginger syrup , makes it a hit for all ages. By the way, it's easy to make too! The recipe below can cater for 4-5 pax. Gentle reminder: Be careful when boiling the soybean milk! It will foam up and overflow when it's brought to a boil. Please use a bigger pot, turn to lower heat when it starts boiling and open the lid.
🚩Important note: Boil soybean milk over medium high heat. Cook around 5-8 minutes, keep stirring. Keep an eye as the milk will foam easily when it's boiling. Reduce the heat to low, continue to simmer for another 15-20 minutes.

***RECIPE***
ORGANIC SOYBEAN 有机黄豆 (150g)
RINSED & SOAK IN WATER 洗净后浸泡在水 (4-5 HOURS)

*GINGER SYRUP*
BROWN SUGAR 黄糖 (150g)
PANDAN LEAVES 班兰叶 (5 PCS)
OLD GINGER 老姜 (40g)
CRUSH GINGER 拍扁
PLACE SUGAR IN A POT 黄糖倒入锅
ADD IN WATER 清水 (100ml) GINGER & PANDAN LEAVES 姜&班兰叶
ONCE BOILED, TURN TO LOW HEAT TO SIMMER 煮滚后,转小火焖煮(20 MIN)
STIR OCCASIONALLY 间中搅拌一下
STRAIN THE GINGER SYRUP 过滤姜糖

AFTER 5-6 HOURS, SOY BEAN BECAME DOUBLE THE SIZE. REMOVE SKIN 去皮
DIVIDE INTO 2-3 PORTIONS 分成两至三次
USE A JUICER TO JUICE THE SOYBEANS WITH WATER (1 LITER) 黄豆&清水依次放入榨汁机榨汁
USE CLOTH BAG TO STRAIN SOYBEAN MILK 用布袋过滤豆浆
COOK THE SOY MILK 煮豆浆
ADD IN PANDAN LEAVES 放入班兰叶 (6 PCS)
BRING TO A BOIL 煮滚

*PREPARE COAGULANT*
CORN FLOUR 玉米粉 (1 1/2 TBSP)
GDL 果酸 (1/2 TSP)
ADD WATER & MIX WELL 加入水搅匀 (50ml)
POUR INTO A POT 倒入锅

POUR IN BOILED SOY MILK 把煮沸的豆浆冲入
STIR QUICKLY 快速搅拌 REMOVE BUBBLES 去泡末
LEAVE ASIDE THE MIXTURE WILL SET AFTER 20 MIN 20分钟后凝固

SPOON INTO A BOWL 把豆腐花盛入碗
DRIZZLE SOME SYRUP AND SERVE 淋上糖浆即可食用
