Resep Tahu Bakso Semarang (untuk 5-6 porsi)

Bahan:
900 gr tahu putih sutra
340 gr ayam paha filet + 30 gr kulit
250 gr daging sapi cincang
5-6 siung bawang putih
3 sdm bawang goreng
150 gr tepung tapioka
2 butir putih telur
60 gr air es / es batu
1 sdm garam
1 sdm kaldu bubuk / penyedap
2 sdm gula pasir
¾ sdt merica

Lainnya:
Minyak Goreng Fortune
Nasi Beras Premium Fortune

Pelengkap:
Cabai rawit hijau

Langkah:
1. Panaskan minyak goreng fortune lalu masukkan tahu, goreng hingga kering, tiriskan
2. Gunting kulit ayam masukkan ke dalam food processor beserta daging ayam, daging sapi, bawang putih, garam, gula, kaldu bubuk, dan merica hingga halus dan lengket
3. Masukkan es batu, haluskan kemudian masukkan putih telur dan bawang goreng, haluskan kembali
4. Masukkan tepung tapioka, haluskan hingga menyatu kemudian pindahkan ke dalam piping bag
5. Keluarkan sedikit isian tahu lalu isi tahu dengan adonan, rapikan dengan garpu, ulangi hingga habis
6. Kukus tahu bakso selama 20 menit hingga matang
7. Tahu bakso siap disajikan

Semarang Stuffed Tofu Recipe (yield 5-6 servings)

Ingredients:
900 g silken white tofu
340 g chicken thigh fillet + 30 g skin
250 g ground beef
5-6 clove garlic
3 tbsp fried shallots
150 g tapioca flour
2 pc egg white
60 gr cold water / ice cube
1 tbsp salt
1 tbsp stock powder / flavor enhancer
2 tbsp sugar
¾ tsp pepper

Others:
Fortune Oi
Fortune Premium Rice

Add-ons:
Green Thai chili

Steps:
1. Heat Fortune oil, then add tofu and fry until crisp. Set aside.
2. Cut up the chicken skin. Add into the food processor along with chicken fillet, beef, garlic, salt, sugar, stock powder, and pepper. Blend until smooth and sticky.
3. Add the ice cubes in. Blend, then add the egg whites and fried shallots. Blend again.
4. Add the tapioca flour. Blend until the dough comes together, then transfer into a piping bag.
5. Scrape some tofu out, then pipe the dough into the tofu. Use a fork to make it neat. Repeat until finished.
6. Steam the Stuffed Tofu for 20 minutes until cooked.
7. Stuffed Tofu is ready to serve
