Yes I know that that extra egg white I added in there wasn't cooked to 120F but the odds of getting sick over an egg white are pretty small. I survived it but I recommend bringing all your egg whites to the correct temperature, just to be safe.

Lemon Curd
4 eggs
1/2 cup butter
6 tbsp lemon juice
grated zest of 2 large lemons (2-3 tbsp)
1 cup sugar

Rice Krispies Layer
4 tbsp butter
1 -10-ounce package marshmallows (apparently a fresh package is important)
1 -3.4-ounce package instant lemon pudding
6 cups Rice Krispies cereal

Meringue
2 egg whites, room temperature ( I recommend 3 or 4 large egg whites if you like lots of meringue)
1/2 cup white sugar
1/8 teaspoon cream of tartar

Melt the marshmallows and the 1/2 cup butter together over the stove on low in a large pot or cook in the microwave in a large bowl (microwave safe bowl....did I need to mention that?) for about 1.5 minutes on high until marshmallow are huge and puffy and the butter is melted.
Stir the melted marshmallows and butter together until smooth. Pour in the dry pudding mix and stir until combined.
Add rice krispies and stir until coated.
Press mixture into the bottom of a greased 9x13" baking dish.
Set aside.

In a medium double boiler saucepan (or metal bowl over a pot of simmering water), combine the lemon curd ingredients (except for the eggs).
Cook in the double boiler with the water simmering underneath, until well combined and until sugar is dissolved (no longer gritty between fingers).
Beat the 4 eggs in a medium bowl.
Take the hot mixture off of the stove and pour some of the hot mixture into the eggs whisking all the while.
When you've poured in about half the hot mixture into the eggs (while continuously whisking, did I mention the whisking?)
Now take the warmed up eggs and pour the whole thing back into the double boiler pot (while.... you guessed it.... whisking)
Cook the mixture over the simmering water for about 15 minutes until thickened. It will be runnier than pudding, it will be about as thick as a cheese sauce.
Remove from heat, pour into other bowl and cover surface of curd with plastic wrap. Refrigerate until completely cool.
Do dishes and wash out your double boiler while you are waiting.

In the clean double boiler, combine the meringue ingredients.
Whisk, whisk, whisk over simmering water until temperature reaches 120 F (this will feel like pretty hot tap water, but not super scalding hot tap water).
Remove from heat and beat mixture until it is double in volume and it is white fluffy and glossy and will hold stiff peaks.

Spoon cooled lemon curd onto the top of the rice krispies layer and then spread the meringue over top of the lemon curd.
Rough up surface into cute little peaks.
Place under a broiler until browned. This happens super quickly.
Crouch down in front of your oven door and watch it until it is done.
Do not leave it.
Trust me, if you leave it alone you will see a squirrel, answer the phone, check facebook, get sucked into pinterest etc.. and it will burn.
