Moussaka is the favorite home cooked meal for Greeks. In this lighter, healthier and easier moussaka version, we prepare the vegetables in the oven. I will tell you in detail how to succeed in the perfect mousaka!

Ingredients:

Vegetables:
5 potatoes
3 eggplants
oil
Salt
Pepper

Meat sauce:
Oil for frying
2-3 onions
2 cloves of garlic
1 kg ground lamb or beef
1 teaspoon of cinnamon
1 tsp black pepper
500 g pureed tomatoes
400 g of chopped tomatoes
2 teaspoons of sugar
3 bay leaves
Add salt to taste

Béchamel sauce:
150 g of butter
2½ dl flour
1½ liters of milk
Salt
Pepper
A pinch of nutmeg

Grated cheese on top

Instructions:

Potatoes and eggplants:
Peel and slice the potatoes into the baking pan. Add oil, salt and pepper. Mix. Slice the eggplants into centimeter thick slices. Add salt on top and leave for half an hour. Pat the bitter liquid absorbed by the salt off the surface with a paper towel. Brush a thin layer of olive oil on the surfaces of the eggplants.
Cook potatoes (approx. one hour) and eggplants (approx. half an hour) in the oven at 200 degrees until they are soft. Be careful not to burn or dry out the eggplants.

Meat sauce:
Peel and chop the onions and garlic. Sauté. Add minced meat and brown. Mix in pepper and cinnamon. Add pureed tomatoes, chopped tomatoes, sugar and bay leaves. Simmer for 20 minutes and boil off the excess liquid. Remove the bay leaves. Add salt and check the taste.

Spread a thin layer of meat sauce on top of the potatoes in the baking pan. Add the eggplants on top of the potatoes. Pour the rest of the sauce.

Béchamel sauce:
Melt the butter in a pot. Add the flour and heat for a couple of minutes. Don't brown. Add milk in small portions, stirring constantly. Heat to boiling point.
Add the spices and check the taste.

Pour the béchamel sauce into the baking pan and add grated cheese on top. Put the moussaka on the middle level of the oven at 200 degrees for about an hour, until the surface is nicely browned. Let it rest in the oven for another hour.
