The only infrared film available today in 4x5 sheet film large format is Rollei INFRARED which is an aerial surveillance film with "extended red sensitivity". Ilford SFX 200 film also has extended red sensitivity but is only made in 35mm and 120 roll film, not 4x5 sheet film. Neither film extends deep into infrared and a 720nm filter is about the best to use, it's deep red but not completely opaque to visible light. Deeper infrared filters like 760nm block more visible light and may still make an imager and the deepest 950nm filters completely blocks all visible and the near infrared light the film is sensitive to and will not make an image at all.

Rollei INFRARED has an ISO* rating of 400 in visible light. Its rating for infrared depends on the filter being used and conditions (attitude and longitude, altitude, season, weather) and needs to be determined by practical test but generally ISO 6 is a good place to start: that is, set your hand-held light meter to ISO 6, put your 720nm filter on the lens and take incident readings. Bracketing will help while you''re sorting the exposure out. Stick with one filter and one developer.

ISO ratings are made using calibrated and standardised light sources, developed using a specified agent to a specified contrast, and based on a specified density above base+fog. It's possible to achieve higher film sensitivities using non-standard developing agents, developing to non-standard contrast, measuring at non-standard densities... you get the idea. Such a non-ISO-standard speed rating should be referred to as an Exposure Index (EI) which is why films like Kodak Tmax 3200 and Ilford Delta 3200 have ISO ratings of 800 and 100 respectively but can be exposed at an EI up to 3200 and produce acceptable results (depending on how you define "acceptable" of course).
