40 g neutral vegetable oil
50 g 2.5-3.2% milk
1 g salt
130 g blueberries
10 g corn starch

▶ SYRUP for SOAKING:
80 g water
80 g sugar

▶ BLUEBERRY CONFIT:
100 g blueberries
20 g sugar
5 g cornstarch
3 g lemon juice

▶ LEMON CURD:
80 g lemon juice
1 tbsp lemon zest
75 g sugar
40 g butter
35-40 g egg yolks

▶ BLUEBERRY CREAM:
350 g cold cream cheese
400 g cold cream 33-36%
5 g vanilla sugar
100 g powdered sugar
70-75 g cold blueberry puree
