Bottarga is an Italian delicacy made of cured and dried fish eggs. The fish egg sacs from either the grey mullet or yellow fin tuna are pressed to remove any air pockets, then packed under some salt to extract any moisture. The cured fish eggs are then air dried for up to 3 months to preserve them. Bottarga can be grated in to pasta dishes or grated onto bread or eggs to serve as antipasti. Once opened, bottarga will last up to a year in the refrigerator. Bottarga is sometimes referred to as the 'poor man's caviar' as it is also made with fish eggs. However, it is still not a cheap product due to it's labour intensive production method, but used sparingly it will go a long way to add flavour to your dishes!
