Dark Mild is one of the coolest beer styles I've been sleeping on for so long. It is simultaneously low in alcohol, but high in drinkability and flavor, and feels like a full-sized beer! The flavor is nutty, rich and malty and leaves you wanting another pint, which is fine because this is less than 4% ABV! This rare beer style almost disappeared entirely if not for homebrewers and is finally starting to come back.

"A Wee Little Thing"

3.7% ABV 31 IBU

5.5 lb Admiral Maiden Voyage (72.1%)
0.75 lb Admiral Kilnsmith (9.8%)
0.75 lb Simpsons Malted Oats (9.8%)
0.25 lb Simpsons Crystal Dark (3.3%)
3 oz Weyermann Carafa Special II (2.5%) *Yes the video text is wrong
3 oz Fawcett Pale Chocolate Malt (2.5%) *Yes the video text is wrong

Mash:
Mash at 155 F (68 C) for 60 min or overnight

Water (ppm): Ca: 101, Mg 17, Na 49, Cl 105, SO4 197, HCO3 88
Add to 8 gal (30 L) RO water: 3g Baking soda, 5g CaCl2, 1g NaCl, 5g Epsom, 7g Gypsum

60 min boil:
60 min - Add 1 oz (28g) East Kent Goldings (5% AA) (20 IBU)
20 min - Add 1 oz (28g) East Kent Goldings (5% AA) (11 IBU)

OG: 1.037

Yeast: Lallemand Nottingham

Ferment for 1-2 weeks at 65 F (18 C). Cold crash and naturally carbonate

FG: 1.009
