Healthier Banana Bran Muffins
These yummy muffins will have you craving for more! You won’t notice how much fiber is in these muffins. I add strawberries and chocolate into these muffins, which is my family’s fave. But you could substitute in other ingredients such as other fruit, raisins, and or nuts. I can’t wait to hear about your favourite version…

Ingredients:

2-3 ripe bananas (approx. 1 cup)
6 tbsp vegetable oil
1 cup brown sugar
1 tsp vanilla
1 egg substitute (Ener-G or Pano Riso)
¼ cup soy milk
½ cup bran
½ cup quick cooking oats
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
½ cup strawberries
½ cup chocolate chips

Instructions:

Set oven to 325°F.

Mash bananas in a bowl. Set aside

In a separate bowl add milk, bran and oatmeal. (I sometimes change the bran/oatmeal ratio and even add wheat germ or hemp hearts. Whatever combination you use it just has to add to 1 cup.) Add mashed bananas, vegetable oil, brown sugar, vanilla and egg substitute.


In another bowl, mix the dry ingredients together: whole wheat flour, baking powder and baking soda. Add strawberries and chocolate chips.

Note: your additional ingredients have to add up to one cup. Instead of strawberries and chocolate chips, you can use blueberries, dried fruit, coconut or nuts.

Add banana mix to flour mix until just combined.

Fill your muffin liner with muffin batter leaving room for the muffin to rise. Bake for 20-25 minutes.

If using mini muffin size, bake for 12-15 minutes.

This makes about 12-15 muffins.
