Butter Garlic Potatoes(Aloo/Alu) - A very easy, simple but lip-smacking potato recipe that will leave you craving for more. The heartiness of the butter and warmth of the garlic alongwith the perfecty cooked potatoes melts in your mouth leaving a delicious and delicate flavour.

--Ingridient for Butter Garlic Potatoes

Potatoes 600g
Water for boiling potatoes
Ginger 10g
Garlic 15g
Onion 25g
Coriander leaves as required
Dry red chillies 4
Oil 1 tsp
Butter as required
Salt as required
Black pepper a pinch

Instructions

---Prepare Potatoes

Rinse the baby potatoes well.
(Info: If you are using the normal sized potatoes, you can cut it into
2 or 4 equal parts)

Add the baby potatoes in a pressure cooker, 2 cups of water and salt.
Pressure cook for 1-2 whistles.

(Info: you can also boil the potatoes in an open vessel for about 20 - 25 min)

Once pressure releases, drain the water and allow the potatoes to cool.
Then, peel off the skin from the potatoes.

Take the boiled or skin peeled pototatos, cut the medium sized ptatoes into two and use the small ones as it is and keep aside.

--Preparing masala mix and final steps

Take a pan, once the pan is hot, add oil.
Once the oil is hot, add chopped onion, garlic, chopped ginger and dry red chillies and saute.
Once they are 50% cooked, allow it to cool and then transfer to a mixer. Masala mix is ready and keep aside.

--Preparing butter garlic potatoes

Use the same pan, once the pan is hot, add butter as required.
Once the butter melts, add masala mix and saute for a few mintues.
Add boiled potatoes and mix well, after a few minutes add salt as required and a pinch of black pepper and mix well. Garnish with chopped coriander leaves and serve hot!!
