Delicious Homemade Butter Chicken Recipe | Perfect for a Cozy Night In!

Welcome to my kitchen! Today, I'm sharing my favorite Butter Chicken recipe that's sure to become a family favorite. This dish is rich, creamy, and bursting with flavor. Ingredients:

4 large chicken breasts, cubed
1 tbsp Garam Masala
1 tbsp Cumin
1 tbsp Coriander
1 tbsp Curry Powder
1 tbsp White Pepper
1 tbsp Cayenne Pepper
2 tsp Salt (divided)
4 tbsp Double Cream Plain Yogurt
2 tbsp Fresh Lemon Juice
2 tbsp Vegetable Oil
1 Red Onion, finely chopped
2 tbsp Fresh Ginger, chopped
3 cloves Garlic, minced
1 tbsp Biryani Mix (Jeera seeds, Star Anise, Cinnamon Sticks, Mustard Seeds, Green Cardamom, Cloves)
4 Tomatoes, chopped
1/4 cup Tomato Sauce
1/2 tin Coconut Cream
2 tbsp Butter
Fresh Mint, chopped (for garnish)
Basmati Rice (for serving)

Instructions:

Marinate the Chicken:

In a large bowl, mix the chicken with Garam Masala, Cumin, Coriander, Curry Powder, White Pepper, Cayenne Pepper, 1 tsp Salt, yogurt, and lemon juice.
Cover and refrigerate for at least 2 hours.

Prepare the Sauce:

In a large pot, heat the vegetable oil over medium heat.
Add the red onion and sauté for 2 minutes.
Add the chopped ginger and minced garlic, cooking until fragrant.
Stir in the biryani mix and let the spices bloom for a minute.
Add the chopped tomatoes and simmer for 5 minutes.
Season with the same spices used for the chicken and 1 tsp of salt.
Stir in the tomato sauce, cover, and simmer for 10 minutes until the mixture is juicy.
Remove from heat and let it cool completely.
Once cooled, blend the mixture with the coconut cream until smooth.

Cook the Chicken:

In the same pot, melt the butter over medium heat.
Add the marinated chicken and cook on both sides for 2-3 minutes until lightly charred.
Pour in the blended sauce mixture and simmer on low heat for 10 minutes.

Finish and Serve:

Stir in 4 tbsp of butter, chopped mint and cover, allowing the flavors to meld for 2 minutes.
Serve hot with fragrant Basmati rice
