It's already starting to heat up here in Arizona! With temperatures hitting 100 this week, Ken and I have been thinking of ways to keep the house cool. One way is to do all the cooking outdoors, but I don't want to grill for every meal. I decided to review the new solar cooker I recently purchased from allseasonsolarcooker.com, plus give you an easy recipe (below) to try if you get one yourself.




Pizza Eggs Recipe- serves 2-4 people, 2-ish eggs per person depending on sides.
2 eggs per person
cream, about a Tbs per person
salt-free garlic herb seasoning- tsp to Tbs, to taste
powdered parmesan tsp to Tbs, to taste
pizza sauce of choice
pinch of Italian seasoning or oregano
cheese
other pizza toppings (tapenade is surpisingly good if you like olives)
butter/oil for pan to prevent stickingg

Mix eggs, cream, seasoning, and powdered parmesan. Melt butter in saucepan or in baking dish, pour in egg mixture. Cook on low/med (or about an hour in solar cooker) until eggs are set.
Spread pizza sauce over eggs and sprinkle with some Italian seasoning but leave a little for last.
Put toppings on pizza but put cheese on last, then add the last sprinkle of Italian seasoning. This lets you get the crunchy, bubbly brown cheese on top.
Put pan either in oven or back into solar cooker until cheese is melted and toppings are hot/cooked.
Either use a brulee torch or your broiler to brown cheese.
