Chicharron de Pollo is a Caribbean-style fried chicken dish popular as street and beach food. The zesty flavor sets this dish apart from other fried chicken, which comes from citrus juices, vinegar, and garlic. These Chicharron de Pollo are twice-fried for maximum crispiness! Traditionally, skin-on and bone-in chicken thighs are the cut most used because they stay moist through the double frying process. If you want to use breast meat, I suggest you only fry it once so that the chicken breast doesn't overcook. Serve these Chicharron de Pollo with some fried green plantains (Tostones).
