For béchamel sauce

Milk 1Lt
Butter 150gr
Flour 150gr
2 eggs
A pinch of cinnamon
Grated Parmesan 100gr

Description:
we put all the ingredients in the THERMOMIX and we cook it at speed 5 for 15 minutes at 90 degrees

4 aubergens
300gr mushrooms
50gr soya sauce
Parmesan
Salt
paper
Tarragon
Olive oil

Description :
For the mushroom minced : we need the half amount of mushrooms to be chopped and cooked in the pan, drain them very well and we season it with dry tarragon and the other half amount of the mushrooms we purée them in the THERMOMIX with the soya sauce cooked for 5 minutes 70 degrees speed 8 , at the end we mix all the mushrooms together

The aubergines we slice them and we cook them in the oven at 180 for 25 minutes
Built up and cook for 20min in 180 degrees.
