Dhaba Style Masala Chicken Recipe:

(Tsp- Teaspoon; Tbsp- Tablespoon )

Chicken marination:

1 kg chicken with bone (curry cut)
Salt to taste
½ tsp turmeric powder
1 tsp Kashmiri chilli powder
1 tbsp ginger garlic paste


Tempering:
1 inch cinnamon
3-4 green cardamom
1 black cardamom
3-4 cloves
1 bay leaf

Other ingredients:
2 tbsp oil
3 medium onion (sliced)
1 tbsp ginger garlic paste
2-3 chopped green chilli
Salt to taste
1 tsp Kashmiri chilli powder
1 tsp coriander powder
½ tsp cumin powder
½ tsp garam masala
½ kasturi methi
2 tbsp fresh coriander leaves
1 cup tomato paste



Process:

Heat oil in a kadhai/wok and add the whole spices. Give a mix.
Add the sliced onions. Fry onion slices for 7-8 mins on medium heat till the onions are light golden brown in colour.
Add the ginger garlic paste and chopped green chilli, give a mix and fry on medium heat for 2-3 mins till raw smell is gone.
Add marinated chicken, fry chicken for 2-3 mins on high heat. After that, cook chicken for 5-6 mins on medium heat.
Add Kashmiri chilli powder, coriander powder, cumin powder and garam masala. Mix it well. Cook for a minute on medium heat.
Add tomato paste and salt to taste. Mix it well. Cook till oil gets separates.
Once oil is separates, cover and cook for 15-20 mins on low heat.
After that add water (if required) to adjust consistency.
Add fresh coriander leaves and give a mix.
Simmer for a minute.
Garnish with chopped coriander leaves.
Serve with roti, naan or rice.
