Spaghetti Aglio e Olio
INGREDIENTS
1/4 cup extra-virgin olive oil
3-4 cloves garlic, thinly sliced
1/4 teaspoon crushed red chilli flakes
Wholewheat Spaghetti(or any pasta of choice)- 250 gms
1 lemon, zested & juiced
Freshly ground black pepper- 1/4 tsp
Finely chopped parsley- lots
Vegan (or regular) Parmesan cheese - to taste
Method
Heat olive oil in a pan over medium heat. Add the garlic & chilli flakes & cook till the garlic just starts to brown. Add the pasta water & allow it simmer slightly. Add the pasta & cook adding a little more water if needed. Add pepper, parsley, lemon zest and juice. Transfer to a serving platter & serve with some more parsley & Parmesan cheese.

Moroccan Style Tofu with Carrots
Olive oil- 1 Tbsp
2 carrots
250 gms extra firm Tofu
1 onion (sliced)
1 Tsp garlic (minced)
Salt to taste
For the Moroccon spice mix
1 tsp powders of coriander seeds & paprika, dry ginger powder and 1/2 tsp powders of cinnamon, turmeric and cumin seeds.
Cloves -2-3
Mint leaves (for garnish)
Method
Remove all the water from tofu & marinate with the spice mix, salt and lemon juice generously on both sides & keep for Atleast 30 mins.
Peel the carrots & cut them in shape of choice. Par boil the carrots in salted water till it’s tender yet crunchy.
Heat oil in a pan & sauté the tofu till Golden brown on all sides. Remove off the flame and place on the platter. Now in the same pan, add the cloves followed by onions & sauté on medium heat until soft & slightly brown. Add the carrots, followed by the spice mix and salt. Once done, add to the platter around the tofu & serve garnished with mint leaves.
