It's another soup night tonight! We're making a Cheesy Hamburger Potato Soup for supper and a homemade Yellow Cake with Old Fashioned Chocolate Frosting for dessert!

Cheesy Hamburger Potato Soup:
Ingredients:
1 lb lean ground beef
1 cup diced yellow onions
1/2 cup butter
1/2 cup all purpose flour
3 cups chicken broth
2 cups milk
1 cup heavy cream
1 tbsp garlic powder
1 tbsp onion powder
1 tsp salt
1 tsp pepper
3 cups frozen diced hash brown potatoes
1 cup chopped green onions
2 cups shredded cheese, I used sharp cheddar and Colby Jack

Directions:
Cook the ground beef in a large pot over medium-high heat.
Add the diced onions to the pot.
Crumble the ground beef well as it cooks.
Once the ground beef is fully cooked, drain, then add the butter to the pot.
Once the butter is melted, add the flour and mix well coating the ground beef.
Cook for 3 minutes.
Add the chicken broth to the pot and whisk until a thick mixture forms.
Add the milk and cream.
Add the garlic powder, onion powder, salt and pepper to the pot and mix well.
Add the frozen diced hash brown potatoes.
Reduced the heat to medium-low and simmer, stirring frequently, for 10 minutes.
After 10 minutes add the chopped green onions and the cheese mixing until cheese melts.
Serve with toppings of your choice!

Yellow Cake:
Ingredients
2 cups sugar
1 cup butter, softened
5 large eggs
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups whole milk
1 teaspoon vanilla extract

Directions:
Prepare a 9X13 pan with cooking spray and flour.
Preheat oven to 350°F.

Beat sugar and butter with a stand mixer fitted with a paddle attachment on medium-high speed until fluffy, about 4 minutes. Add eggs 1 at a time, beating well after each addition.

Stir together flour, baking powder, and salt in a bowl until combined; add to butter mixture alternately with milk in 2 batches, beginning and ending with flour mixture, beating on low speed until incorporated after each addition. Stir in vanilla.

Pour batter evenly into prepared cake pan. Bake in preheated oven until a wooden pick inserted in centers comes out clean, 25 to 30 minutes. Cool in pan 10 minutes.

Old Fashioned Chocolate Fudge Frosting:
Ingredients:
3 cups powdered sugar
4 tbs butter
1/2 cup half & half
1/2 cup semi-sweet chocolate chips
3 tbs cocoa powder
1 tsp vanilla

Directions:
In a pot over medium heat melt butter with 1 1/2 cups of the powdered sugar and the half & half. Bring to a boil. Let boil 1 minute then remove from heat. Add the rest of the powdered sugar, chocolate chips, cocoa powder, and vanilla. If the frosting is still very thin you can add a little more powdered sugar, but it will thicken as it cools so don't add too much.

Once cake and frosting are cooled you can frost the cake.
