Who loves pizza??
We all love pizza, but gourmet, sourdough pizza, that's on a whole other level!!
Here is my simple recipe for amazing sourdough pizza!
It is my same recipe I use for my sourdough bread (just less stretch & folds).

I use a Pizza Steel to bake the pizza in my oven, 1/4" thick. Here's my affiliate link for the steel at a discount.

Recipe
Ingredients:

350g water
100g active sourdough starter
500g bread flour (or all-purpose flour)
10g salt
Pizza sauce
Mozzarella cheese (4 blend italian cheeses)
Toppings of your choice (pepperoni, mushrooms, bell peppers, etc.)

Instructions:

In a large mixing bowl, combine the water and active sourdough starter. Mix until the starter is fully dissolved in the water.

Add the flour and salt to the bowl. Using a wooden spoon or your hands, mix until a shaggy dough forms and all the flour is hydrated.

Cover the bowl with a plastic shower cap or plastic wrap and let the dough rest for 1 hour at room temperature.

After 1 hour, perform one set of stretch and folds. To do this, wet your hands slightly and gently stretch one side of the dough up and fold it over the center. Repeat this process for all four sides of the dough, then flip the dough over so the seam side is down, tuck it under to form a ball.

Cover the bowl again and let the dough ferment at room temperature until it doubles in size. This can take anywhere from 4 to 8 hours depending on the temperature of your kitchen and the activity of your sourdough starter.

Once the dough has doubled in size, divide it into four equal portions. Shape each portion into a ball and place them in oiled containers. Make sure the containers are large enough to allow the dough to expand. Cover the containers and refrigerate for at least 24 hours.

After at least 24 hours of refrigeration, take the dough out of the fridge and let it sit at room temperature until it triples in size. This can take another 6 to 10 hours.

Preheat your oven to its highest temperature for an hour, ideally with a pizza steel or pizza stone inside to preheat as well. This will help create a crispy crust.

Once the dough has tripled in size, lightly flour your work surface (semolina flour or fine corn meal is best) and shape each dough ball into an 8 to 10-inch pizza crust. Use your hands to stretch the dough to your desired thickness.

Place the shaped pizza crusts on parchment paper or a pizza peel dusted with cornmeal to prevent sticking.

Add your desired pizza sauce, cheese, and toppings to each pizza crust.

Carefully transfer the pizzas onto the preheated pizza steel or stone in the oven.

Bake the pizzas for about 4-8 minutes or until the crust is golden brown and the cheese is melted and bubbly.

Once done, remove the pizzas from the oven and let them cool for a minute before slicing and serving.
