There will come a day when you find yourself really hungry for something that will hit the spot and stick to your ribs, I have those days often. These Chilaquiles Verdes Rellenos do the job, the flavor of the cheesy and crispy chilaquiles covered with my amazing Salsa Verde with refried beans and eggs are unbelievably delicious, fit for a king. You can enjoy this delicious meal anytime of the day, if you want to change them around you can side them with Mexican rice and a salad and share them with friends. If you like you can prepare them the day before, wrap them in paper towels then put them in a zip lock bag and put them in the fridge and all you have to do is fry them the next day. I used Freshly grated Oaxaca cheese, but Monterey jack or mozzarella are good too. I hope you give this recipe a try. ❤️

INGREDIENTS-----------------------------
9 Med/large Tomatillos
3 Serrano Peppers (optional)
1 Tbsp Chicken Bouillon (I used Knorr)
1/4 Small Onion
3 Large Garlic Cloves
1/4 C. finely chopped onions (for salsa)
Small bunch Cilantro
1/2 tsp Mexican oregano
Salt as needed
Pepper as needed
Water to boil Peppers and Tomatillos
Oil for frying (as needed)
Freshly grated Oaxaca cheese (as needed)

MASA INGREDIENTS---------------------------
2 C. Maseca Nixta Masa
1/2 tsp Salt
1 3/4 Warm water (bit more if needed)

REFRIED BEANS
FRIED EGG
