This Sama Rice kheer is a healthy dessert option, for you if you are on a fast/upvas, as it is made of healthy jaggery instead of unhealthy refined sugar. Sama Rice is known by various names in India like samo chawal, Sama, Saamak, swank, Samak, samavat, moriyo, varai, bhagar, vari, varyacha tandul, Vari Tandul, Bhagaror Kodri, jungle rice etc. In English it is called barnyard millet.

Ingredients you need to make Samo rice / chawal kheer / Payasam/ pudding :-

1/2 cup samo rice/Samak chawal
2.5 cup milk
1/3 cup jaggery
1/4 cup chopped almonds
2-3 crushed cardamom
4 tsp water
Water for soaking
Other dry fruits of your choice ( raisins, pista etc)

Method :-

Soak Sama/samak rice for atleast two hours to upto 5-6 hours.
Switch on the flames, In a heavy bottom pan or patila add some (1-2tsp) water (this is to prevent the milk or kheer from getting stick at the bottom. Now add 2.5 cup of milk.
Bring the milk to a boil, once boiled add soaked Samak rice(remove the water from soaking).
Cook on low heat for 10-15 minutes. Keep stirring in between.
Meanwhile melt jaggery in 2 tsp water.
After 10-15 min add Chopped Almonds to the kheer. And switch off the flame.
Let the temperature come down a little. After 3-4 minutes add melted jaggery and mix everything well.
Your heathy Sama/Samak kheer/ payasam is ready to serve.
Serve it warm or keep it in the fridge to enjoy chilled rice pudding.
