Aloo Dum Biryani

Ingredients for Fried Potatoes:
Potatoes 1 kg
Yellow food color 1/2 tsp
Salt 1 tsp
Oil 3 tbsp

Ingredients for Boiled Rice:
Water 7-8 cups
Cumin seeds 1 tbsp
Star anise 2
Salt 1 tbsp
Soaked rice 3 cups

Ingredients for Dum Aloo Masala:
Oil 3 tbsp
Cumin seeds 1 tbsp
Black cardamom 2-3
Black peppercorns 1 tbsp
Green cardamom 3-4
Onion (sliced) 1 cup
Fried potatoes
Red chili powder 1 ½ tbsp.
Cumin powder 1/2 tbsp
Coriander powder 1 tbsp
Salt 1 tsp
Yogurt 1 cup
Water 1 cup
Boiled rice
Green coriander (chopped) as required
Lemon sliced as required
Green chilies (half cut) as required
Kewra essence 1 tsp
Yellow food color 1/2 tsp
Fried onion as required

Directions for Fried Potatoes Preparation:
1. In a bowl add potatoes, yellow food color, salt and mix it well.
2. In a pan heat oil and add seasoned potatoes. Fry for 10-12 mins. Set aside.
Directions for Boiled Rice Preparation:
3. In a pot heat water and add cumin seeds, salt, star anise and bring it to a boil.
4. Now add soaked rice and boil until 80% done. Strain and set aside.
Directions for Aloo Dum Masala Preparation:
5. In a pot heat oil and add cumin seeds, black cardamom, black peppercorns, green cardamom and sauté for a minute.
6. Now add onion and cook until it turns dark brown.
7. Add fried potatoes and cook for 3-4 mins. Now add red chili powder, cumin powder, coriander powder, salt and mix it well.
8. Add yogurt, tamarind, aloo Bukhara and cook for 2-3 mins.
9. Add water and cover and cook until fully done.
10. Now add boiled rice, garnish with green coriander, lemon, green chilies, kewra essence and add yellow food color and fried onion on top.
11. Cover and steam over low flame for 10-12 mins.
12. Your Aloo Dum Biryani is ready. Serve and enjoy.
