Indian Coffee House Vegetable Cutlet And Beetroot Sauce Recipe || Malayalam || No Egg || No Deep Fry

Ingredients and method:-

Beetroot Sauce:-

Ingredients:-

1.Beetroot - 1 Medium
2.Tomato - 2 Medium
3.Ginger - A small piece
4.Chili Powder -1/2 Tsp
5.Turmeric powder -1/4 Tsp
6.Salt - 1/4 Tsp
7.Water -Enough to cover the veggies
8.Sugar - 4 to 6 Tbsp(Depending on how sweet you need it)

Method:-

Cook everything except sugar until the beetroot pieces become soft. Once cooled grind to a smooth past adding sugar.

Cutlet:-

Ingredients:-

(This amount will yield about 20 to 25 cutlets)

1. Beetroot - 2 Medium/Large
2. Carrot - 3 Medium
3. Onion - 2 Medium
4. Potatoes - 2 Large
5. Ginger - A small piece
6. Green chilies - 2 or 3
7. Curry leaves- 2 Sprigs
8. Coconut oil - 2 Tbsp
9. Salt
10.Turmeric Powder - 1/4 Tsp
11. Chili Powder - 3/4 Tsp
12.Rusk - 1 Packet(250 Gms. Please do not replace it with breadcrumbs)
13.Sunflower oil - Enough to shallow fry the cutlets

Method:-
•Make crumbs from rusk using a mixer grinder and keep it aside.
•Boil and mash potatoes and keep aside.
•Cut Beetroots, Carrots, Onion, Ginger and Green chilies into small pieces.
•Heat a heavy bottomed pan(preferably a cast iron one) , and add coconut oil.
•Now add all the cut veggies along with salt and turmeric powder. Sauté well then cover and cook for about 5 mins.
•Then add Chili power and sauté for a few mins.
•Cover and cook until the veggies are done.
•Now turn off the heat and add the mashed potatoes. Combine well.
•Add Some of the crumbs and make balls
•Shape it and then shallow fry it.

Serve hot!!!
