Vegan Nasi Lemak
Serves 4

Coconut Rice:
2 cups jasmine rice
2 1/2 cups water
1/2 cup coconut milk
1 tbsp oil
1 inch ginger, sliced
2 stalks lemongrass, halved and bruised
1 pandan leaf, knotted
1 red onion, sliced
Salt to taste

Sambal:
25g dried chilies, boiled for 10 minutes
10 shallots
10 cloves garlic
1/2 inch of ginger
1/2 a sheet of seaweed
1/2 cup water, to blend
1 yellow onion, sliced
1 pandan leaf, knotted

1 tbsp gula melaka or palm sugar
1 tbsp asam jawa or tamarind paste
2 cups water
Salt to taste
MSG (optional)
1/4 - 1/2 cup of oil for cooking, or more

Vegan Ikan Bilis (Fried Anchovies):
2 sheets rice paper
2 sheets seaweed
80g firm tofu
Oil for deep frying

To soak rice paper:
1/2 tsp kombu dashi powder - https://shp.ee/aufh28b

1/2 cup water

Corn starch slurry:
1/2 tsp kombu dashi powder - https://shp.ee/aufh28b
1/2 tsp mushroom seasoning - https://bit.ly/3qYJ67o
1/8 tsp salt
1/2 tsp corn starch
2 tsp water

Bake at 180°c for 8 minutes, then flip and bake for another 10 minutes.
