Welcome to our culinary journey! In this video, our talented Commercial Cook student from RTRK Hotel School demonstrates how to make the classic and delicious Poori Vaaji.

*Ingredients:*
For Poori:
2 cups whole wheat flour
1/2 teaspoon salt
Water as needed
Oil for deep frying

For Vaaji:
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/4 teaspoon asafoetida
1 large onion, finely chopped
2 green chilies, chopped
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
2 large potatoes, boiled and mashed
Salt to taste
Fresh coriander leaves for garnish

*Instructions:*

1. *Preparing the Poori:*
In a mixing bowl, combine the whole wheat flour and salt.
Gradually add water and knead to form a smooth dough.
Divide the dough into small balls and roll them into discs.
Heat oil in a deep frying pan and fry the pooris until golden brown.
Remove and drain on paper towels.

2. *Preparing the Vaaji:*
Heat oil in a pan and add mustard seeds and cumin seeds. Allow them to splutter.
Add asafoetida and chopped onions. Sauté until onions turn golden brown.
Add green chilies and ginger-garlic paste. Sauté for a minute.
Add turmeric powder and mashed potatoes. Mix well.
Add salt to taste and cook for a few minutes.
Garnish with fresh coriander leaves.

3. *Serving:*
Serve the hot and fluffy pooris with the flavorful vaaji.
