Devilled Kidneys on Toast

Devilled kidneys used to be a popular element in the Victorian English upper-class breakfast buffet. These days, we would more likely have them as lunch or a light evening meal. Making devilled kidneys is really quick and easy. The 'devil' in the name refers to the heat of the sauce, but really it's warming rather than spicy like some curries. The warmth of the devil sauce comes from cayenne pepper, English mustard and Worcestershire sauce.
