Ingredients:

• Phool Makhana (fox nuts) – 1 cup
• Sabudana (sago pearls) – ¼ cup
• Milk – 3 cups
• Ghee – 1 tbsp
• Sugar – ½ cup (adjust to taste)
• Cardamom powder – ½ tsp
• Cashews – 8-10
• Almonds – 8-10
• Raisins – 1 tbsp

Instructions:

1. Prep the Sabudana: Soak the sabudana in water for at least 30 minutes, then drain and set aside.
2. Roast the Makhana: In a pan, add ghee and roast the phool makhana until they become crispy. Let them cool, then grind half of the makhana into a coarse powder and keep the rest whole.
3. Cook the Sabudana: In a separate pan, cook the soaked sabudana with a little water until they turn transparent and are soft. Set aside.
4. Boil the Milk: In a deep saucepan, bring the milk to a boil. Once it boils, add the whole and powdered makhana.
5. Simmer: Let the mixture simmer on low heat, allowing the makhana to absorb the milk and soften further.
6. Add Sabudana and Sweeten: Add the cooked sabudana and sugar, stirring until the sugar dissolves.
7. Add Dry Fruits: Heat a little more ghee and fry the cashews, almonds, and raisins until golden. Add them to the payasam.
8. Finish with Cardamom: Add cardamom powder for flavor and give it a good mix.
9. Serve: Enjoy warm or chilled.
