Recipes:

Harissa Tahini Sauce
1/3 cup runny, light, salted tahini (such as Soom)
2 tbsp harissa paste
1 tbsp lemon juice
1 tbsp olive oil
4-6 tbsp of water
salt and pepper to taste

Combine the tahini, harissa paste and lemon juice in a bowl. Whisk until a thick paste is formed. Then add 3 tbsp of water, but just add one 1 tbsp in at a time to prevent the mixture from getting too runny.

Then whisk in the olive oil and then add the remaining water if needed to create the consistency you like. Remember, add a little at a time.

Finish with salt and pepper to taste and enjoy on potatoes, salads, burgers, sandwiches or as a dip for vegan nuggets and fresh veggies!

Note: Like most tahini-based sauces, this will thicken as it sits in the fridge so dilute with a little more water as needed before serving.

Creamy Mustard Sauce
1/2 cup vegan mayo
1-2 tbsp yellow mustard
1 pickle juice

Use as much mustard as you like. I start with 1 tbsp, then taste and add more as desired. Whisk until smooth and enjoy on vegan burgers and fries.
