Apple Cider Doughnuts Recipe:
Makes between 12-24 doughnuts

2 cups Apple Cider
4 1/2 Cups All-purpose Flour
1 Tbsp Baking Powder
1 Tsp Baking Soda
1 Tsp Salt
2 Tsp Cinnamon
1/2 Tsp Nutmeg
6 Tbsp Room Temperature Butter
1/2 Cup Granulated Sugar
1/2 Cup Light Brown Sugar
2 Large Eggs
1/2 Cup Buttermilk
1 Tsp Vanilla
2 Granny Smith Apples

Cinnamon Sugar Coating:
1 Cup Granulated Sugar
3 Tbsp Cinnamon
1 Tbsp Apple Pie Spice

Recipe:
For your Doughnuts the first thing you want to do is reduce your apple cider. Take your 2 cups of apple cider and pour it into an saucepan, put on medium heat and reduce until 1/2 cup. Roughly 15-20 minutes. After your apple cider has reduced, set aside to cool.
In a bowl sift all your dry ingredients (All-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg). When sifted go ahead and whisk it together.
In the bowl of a stand mixer, add your butter and your sugars. With a paddle attachment beat your butter and sugar until light and fluffy. Once its completely beaten scrap down the side. Add your eggs, 1 at a time until combined. Then add the rest of your wet ingredients (apple cider, buttermilk, and vanilla).
Once your wet ingredients are completely combined, make sure to scrap the bowl on the bottom to make sure no sugar is stuck, then add your dry ingredients to your wet. Once your ingredients are combine and become a dough, you are going to skin and cut your apples and add them to the dough. You may make your pieces however big you'd like, I grated mine to make sure there are apple pieces in every bite.
Before you start rolling out your dough, go ahead and get your oil ready. Heat about 1 inch of oil to 325°F
Now flour your surface and roll out your dough to about 1/2 inch thick. Cut your doughnuts using a doughnut cutter or you can use a cup. Place your doughnuts on parchment paper with a little baking spray on the paper to prevent sticking.
When your oil is ready place a few doughnuts in the oil until deep golden brown, then flip. Once both sides are browned set your doughnuts on a wire rack with paper towel underneath it.
While your doughnuts cool mix granulated sugar, cinnamon and apple pie spice together to create your sugar for your doughnuts.
When your doughnuts have almost completely roll them in the sugar mixture and enjoy!!
