sodium citrate grilled cheese ft. my best friend

Grilled cheese is a classic! But how can we replicate that processed American cheese meltability with any cheese we want? The answer is sodium citrate.

How to make your own perfectly meltable cheese:

410 grams of grated cheese of choice
124 grams of water
15 grams sodium citrate

Heat water in a saucepan and dissolve sodium citrate. Gradually add cheese and stir until melted. Immersion blend or regular blend the mixture until super smooth and pour into a loaf pan lined with parchment paper. Place in the fridge or freezer to set for a couple of hours. Slice as desired.
