LANCASHIRE HOT POT Traditional British Classic – PERFECT COMFORT FOOD FOR THE WHOLE FAMILY

Lancashire hotpot is a traditional British classic. It is without a doubt one of the most famous of our British dishes. It's a simple to make, with good quality lamb, carrots and onions, some flavourings and good lamb stock. Layer and Top that off with some slices of potato and bake for One and a half hours serve up with pickled red cabbage and you have Perfect comfort food for the whole family all year round.

Ingredients
Family portion
1 kg lamb diced
4 onions sliced
3 Carrots sliced
1 kg potatoes sliced
3 tbsp butter or more
1 tbsp Oil
2 heaped tbsp flour
500 ml or more if required chicken or lamb stock – 2 stock cubes in water will do
2 bay leaves optional
1 tsp salt
2 tsp black pepper
2 good tbsp Worcestershire sauce
1-2 tsp dried thyme
Oven cook covered 1 hour 170 degrees remove lid or foil
200 degrees 30 mins or more to crisp colour the top layer of potatoes

NOTE: just half ingredients for a smaller portion
