SRILANKAN CURRY BUNS

Ingredients
500 grams all purpose flour
2 eggs
60 grams butter
1 cup milk
2 teaspoon s yeast
2 tablespoons Sugar
1 tsp Salt

Filling as per your choice
1 extra egg for glazing

Method

In a small bowl add dry yeast to warm milk,sugar, mix well and leave it for 10 min to dissolve the yeast to proof.
In another bowl add eggs beat them then add to yeast mixtur,melted butter mix well.

Take a big bowl add flour salt, add the yeast mixture slowly and keep mixing to form a soft, sticky dough.Knead the dough until smooth and put it into a greased bowl cover with a kitchen towel, let it rise for 1- 1 1/2 hour untill double in size.
After 1 hr turn the dough out onto a floured work surface, knead untill smoothe,shiny and elastic and rest it for another 10min.Take a bowl add one egg mix well . Brush it for eggwash if required can add water to it and mix IT again.
Now divide the dough into small balls.roll the dough and place the fillng and roll it .beat the egg .glaze on tops.can make curry buns with any stuffing of your choice.
Preheat oven for 425 F and bake till golden colour..
