In this video, I brew an experimental pale ale with Ekuanot hops and Norwegian Kveik yeast. This video covers the recipe, the brew, the fermentation and the final tasting. Kveik yeast is trending in the homebrew community now and has an amazing ability to ferment ultra-fast and with a huge range of pitching and fermentation temperatures, all without producing off-flavors that other brewers yeasts would. It tends to throw a lot of fruity flavors, making it pair nicely with fruity hops. I saw the yeast at my local homebrew shop and pieced together a recipe with a basic grain bill and some hops I had lying around, attempting to make Ekuanot shine through. The final result was tasty and refreshing after a short 7 day fermentation, although I picked up some less than pleasant flavors from the Ekuanot additions. Also of note was that this was the first brew where I used my recirculating mashing system I built a week prior and with a great result!

The recipe for 5.5 gallons is below, your efficiency may vary:
"Fjord Fiesta"

4.5% ABV 55 IBU

5.5 lb Maris Otter (52.4%)
5 lb US 2-Row (47.6%)

Single Infusion Mash at 152 F (66 C) for 90 min

Water (ppm): Ca: 105, Mg: 16, Na: 71, SO4: 248, Cl: 100, HCO3: 73

60 minute boil:
60 min - Add 1 oz Nelson Sauvin (10 % AA)
10 min - Add 1 oz Ekuanot (13.6% AA)
0 min - Add 1 oz Ekuanot (13.6% AA)

OG: 1.046

Omega OYL-091 Hornindal Kveik Yeast

Ferment from 70-100 F (21-38 C) for 3-7 days

FG: 1.012
