One of the craziest things I did was making the Lao fermented fish sauce PADEK aka PADAEK. South brought me to a local wet market and I bought a KG of their river fish and started the fermentation process right there and then. Thinking back, I should have bought even more.
In order to process this Padek of mine in the most hygienic manner, I brought my own (by checked-in on flight) 1) Strong Kangen water at pH11.5 and 2) a Sodium Hypochlorous Acid for cleaning the fish right at the start.....the rest of the process you could watch on the whole video. THANK YOU.
