Chicken Stew Recipe

Ingredients:
1 tbsp olive oil
1.5 to 2 pounds chicken thighs or drums
4-5 medium to large sweet or yellow onions
3 medium carrots
2 cups stewed tomatoes (or 3 medium fresh tomatoes)
1 tbsp dry parsley
1 tbsp paprika
1 tsp salt
1/2 tsp black pepper
1 bay leaf
4-5 cups of water

Preparation:
Add oil to a large pot. Chop your onions in larger cubes and put in the pot. Chop your carrots in circles. Sautee the onion for about 5-10 minutes. Add the rest of your ingredients and increase temperature to high to bring to a boil. Once your stew starts boiling turn heat down to medium, put lid on top (while leaving an opening to avoid overboiling) and cook for 45 minutes. I did not have to add additional water, but you can add just a little bit depending on how much of your broth evaporates during the cooking process. Let cool, get yourself a nice piece of fresh bread to dip in and enjoy.
