Jennifer's Candy Buckeye Recipe:

2 c. creamy peanut butter
1/2 c. butter (1 stick) softened
2 T. brown sugar, firmly packed
1/4 t. salt
1 1/4 t. vanilla
3 c. powdered sugar
2 c. melting wafers, or semi-sweet chocolate chips
1 t. coconut or vegetable oil if using semi-sweet chips.

Combine peanut butter and butter.
Beat until well combined.
Add brown sugar, vanilla and salt. Mix well.
Gradually add in powdered sugar until completely combined.
Scoop into 1 T. (1") size balls and roll until smooth.
Place on a wax paper tray and freeze 15-20 minutes.
Heat chocolate in the microwave for 30 seconds, stir and heat again, another 30 seconds.
Stir until creamy and smooth. Use a toothpick in the peanut butter ball to dip it into the chocolate.
Only dip it 3/4 of the way. Drain of excess chocolate, and set on a wax paper tray.
Smooth over the hole left from the toothpick. Store in an air tight container or zip top bag.
