Ingredients

Toor dal - 1 ¼ cup.
Grated coconut - ½ of a coconut.
Coriander seeds - 3 tbsp.
Turmeric powder - ½ tbsp.
Fenugreek seeds - ¼ tbsp.
Cumin seeds - ½ tbsp.
Urad dal - 1 tbsp.
Chana dal - 2 tbsp.
Dried chilli - as needed.
Shallots - 4nos.
Asafoetida - as needed.


Clean and cut the vegetables into large pieces.

Potato - 2nos.
Plantain - 1nos.
Drumsticks - 3nos.
Sambar payar - as needed.
Okra - 7nos.
Brinjal - 1nos.
Carrot - 1nos.
Onion - 1 nos.
Tomato - 1nos.
Green chilli - as needed.
Tamarind water - as needed.

For tempering

Mustard seeds - ½ tbsp.
Shallots - 3nos.
Dried chilli - as needed.
Curry leaves - as needed.

To Garnish

Coriander leaves - as needed.

Method

Pressure cook toor dal with enough water. Keep it aside.

Heat oil in a pan. Add asafoetida, saute for a couple of minutes. Remove from pan and keep it aside.

Add chana dal ,saute for a minute. Add urad dal, saute for a couple of minutes. Add fenugreek seeds, cumin seeds saute for a minute. Add coriander seeds. Add grated coconut followed by dried chilli. Turn heat to medium. Add shallots. Saute till coconut turns golden brown. Add turmeric powder, saute for a minute. Switch off flame. Move to a bowl and allow it to cool. Grind the coconut mix with asafoetida and enough water in a mixie/grinder.

Heat a pan. Add cooked dal along with coconut paste and enough water to cook vegetables. Mix well.

Add all the vegetables except okra with enough salt. Cover and cook till the vegetables are 3/4 th done. Add tamarind water. Mix it well. Add okra. Cover and cook for about 2 minutes. Add coriander leaves.

Heat oil in a pan. Splutter mustard seeds. Add shallots, dried chilli, curry leaves and a pinch of turmeric powder. Saute for a couple of minutes.

Pour it over the prepared sambar and Enjoy
