Cheesecake Factory is a glutton's paradise. You get your own individual platter (portion 😂) that could easily feed a five-person family. If you are smart, you can pack the rest home and have it for the next day's lunch, dinner, breakfast. haha
One time, my husband and I sat next to an adorable little French family. They had two sons who were quietly enjoying their coloring book and crayons. I knew that they were French because I overheard them struggle to understand the waitress's "Are you all set?". The French couple were all, "Huh??" And the waitress was sort of confused and slumped away. haha
While my husband and I ordered our meals, I noticed that the French mother was listening in on my conversation with our waitress. I substituted my french fries for a green salad with some ranch dressing on the side. Obviously, because I live in image-obsessed Los Angeles and I need to keep things tight 🤣 When it came time for the French family to order, the mother ordered her hamburger with a substitution of green salad as well!
I remember being in France and never ever daring to ask for any "accommodations". For one, I couldn't explain myself well enough in French if there were follow-up questions. Secondly, I have seen my native French friends get rudely reprimanded by servers when they requested a vegetarian substitute. All that French attitude has left me traumatized.
In any case, I was happy to set an example of American hospitality and hope that they enjoyed my little city of angels. All set? Bon appétit! 😋

INGREDIENTS:
1 cup vegetable oil
3 avocados
1 clove garlic, chopped
1/2 canned corn
1 Roma tomato, diced
1/4 cup chopped celery
1/4 cup diced red onion
3 sprigs, green onion, chopped
2 TB chopped fresh cilantro leaves
Juice of 1 lime
Salt, pepper, cayenne, cumin, to taste
8 egg roll wrappers
one egg (for egg wash)
DIRECTIONS:
Heat vegetable oil in a large skillet or Dutch oven over medium high heat.
In a medium bowl, add large diced avocados, corn, celery, tomato, red onion, cilantro, lime juice, green onions, spices, salt and pepper, to taste, and gently toss to combine.
-Working one at a time, place avocado mixture in the bottom center of each wrapper. Bring the bottom edge of the wrapper tightly over the filling, folding in the sides.
-Continue rolling until the top of the wrapper is reached. Using your finger, rub the edges of the wrapper with egg wash, pressing to seal.
-Repeat with remaining wrappers and avocado mixture.
Working in batches, add egg rolls to the Dutch oven and fry until evenly golden brown and crispy, about 2-3 minutes.
-Transfer to a paper towel-lined plate.
-Serve immediately with ranch or bottled sweet chili sauce.
